Slow-cooked Chicken Recipe courtesy Emeril Lagasse,
1 whole chicken, 3 1/2 to 4 pounds
Kosher salt
Cracked white pepper
1/2 cup diced onion
1/4 cup diced carrot
1/4 cup diced celery
3 cloves garlic, peeled and smashed
3 sprigs fresh thyme
1 lemon, juiced
4 teaspoons cornstarch
Rinse the chicken both inside and out under cool running water. Pat dry. Season the chicken liberally both inside and out with salt and pepper. Place in a slow cooker. Scatter the onions, carrots, celery, garlic, thyme, and lemon juice over top of the chicken. Cover the slow cooker and set the temperature to high. Cook for 6 hours, undisturbed.
Remove the chicken from the slow cooker, and pour the accumulated juices into a 2-cup heatproof container. Skim the fat from the top and transfer the liquid to a small saucepan. Dissolve the cornstarch in a small bowl with 2 teaspoons of water and whisk to form a slurry. Whisk the slurry into the juices and bring to a boil over high heat. Cook until thickened, season with salt and pepper, and continue to cook an additional 4 to 5 minutes. Cut the chicken into pieces and serve, with the thickened pan juices ladled over the top.

Southwestern Pulled Brisket Sandwiches From Food Network Kitchens
3 pounds beef brisket
Kosher salt
Freshly ground black pepper
2 tablespoons vegetable oil
5 cloves garlic, peeled and smashed
1 Spanish onion, halved and thinly sliced
1 tablespoon chili powder
2 teaspoons ground coriander
2 teaspoons ground cumin
1/4 cup apple cider vinegar
1 1/2 cups water
1 (14 1/2-ounce) can whole peeled tomatoes, with their juices
2 whole canned chipotle chiles en adobo
2 bay leaves
3 tablespoons molasses
Soft sandwich buns
Pickled jalapenos
Season the beef generously with salt and pepper, to taste. Heat a large, heavy skillet over medium-high heat. Add the oil and heat just until beginning to smoke. Add the meat and cook, turning once, until browned on both sides, about 10 minutes total. Transfer the meat to the slow cooker; leave the skillet on the heat.
Add garlic, onion, chili powder, coriander, and cumin to drippings in the skillet and stir until fragrant, about 1 minute. Add vinegar and boil until it's almost gone, scraping the bottom of the pan with a wooden spoon. Stir in water and pour the mixture over the brisket. Crush the tomatoes through your fingers into the slow cooker; add the tomato juices, chipotles, bay leaves, and molasses. Cover the cooker, set it on LOW, and cook the brisket until it pulls apart easily with a fork, about 8 hours.
To serve, leave the meat in the slow cooker and use 2 forks to pull it apart and stir it evenly into the sauce; season with salt and pepper, to taste. Remove and discard bay leaves. Pile the meat on sandwich buns and serve with jalapenos. (This is also great rolled up in tortillas.)
Roast-meat hoagies are a favorite in our household
Slow-cook a 2lb-5lb beef or venision roast (depending on how many people you're feeding, etc.) with garlic, seasoning salt and onion. When roast is cooked through and fork tender (about 6-8 hours) pour off any accumulated juice and the onion (we keep that juice and freeze it for soup). Shred the meat and return it to the crockpot, add 1 can cream of mushroom soup, 1 can cheddar cheese soup and 1 can of drained mushrooms and pieces. Allow to cook for about an hour so flavors meld and everything is heated through. Serve on hoagie buns with sliced Cheddar cheese.
Actually you can take almost any dish and convert it into a crock pot dish, I have dozens of recipes but I thought maybe you would like these three:

Crock pot Macaroni and Cheese
Hazel Laughlin
1 box macaroni , par boiled, drained
1 陆 c. milk or evaporated milk
3 c. shredded cheese (3 - 8oz. Pkgs. Of favorite brick cheese grated.) ( I use the 5 cheese and sharp chedder that is already grated)

Personal note: April uses small shell macaroni instead of elbow macaroni, she says that everyone likes it better because it holds the cheese better

Crock Pot Stuffing
1 c. butter 12-13 c. bread cubes
2 c. chopped onions 陆 tsp. Salt and pepper
2 c. celery, chopped 1-1/2 tsp. dried Sage
1/4 c. parsley sprigs 1 tsp. Dried thyme
2 (4oz) cans mushrooms, 陆 tsp. Marjoram
1 tsp. poultry seasoning 2or 3 c. broth
2 eggs, slightly beaten
Melt butter, saute onions and celery. Drain the mushrooms and add to the ingredients, remove from heat and stir. Add everything together and put into your crock pot. Cook on low for 4-8 hours.
Personal Note: A lot of times I will buy cubes of bread that are already seasoned, I like it a lot better.
Try a rock cornish hen. Just right for two people. With a thawed bird, just put a generous helping of salt in the crock's water, and cook the bird 6-8 hours (use a meat thermometer) on ';low';. Serve with something like potatoes and peas. Don't put the veggies in the crock, everything will taste the same if you do.
Here's an easy one. It's for Kalua style pig, which is a Hawaiian dish. An entire pig is placed into a pit dug in the ground and covered with banana leaves and burlap. This recipe is a bit simpler and involves no digging.
INGREDIENTS
1 (6 pound) pork butt roast
3 tablespoons Hawaiian sea salt
6 tablespoon liquid smoke flavoring
1 cup water
DIRECTIONS
Pierce pork all over with a carving fork. Rub salt then liquid smoke over meat. Place roast in a slow cooker. Add water.
Cover with lid, and cook on Low for 16 to 20 hours, turning once during cooking time.
Remove meat from slow cooker, and shred, adding drippings as needed to moisten.
Fry some cabbage in butter and add some drippings from crockpot. Serve with hot rice.
Enjoy!
