Cold dish recipes?

it needs to keep well in a lunch box. i pack my husbands lunch for work everyday and i would appreciate some good recipes, he is getting tired of sandwiches. thanksCold dish recipes?
Think about going Japanese, I pack bento lunches for my son occasionally, and he really enjoys them.

pasta salad, tuna/chicken salad w/ crackers or pita bread.veggie dip, cheddar cheese and summer sausage,
patato salad if not in a bag for a long time. think of something microwavable if he has one at work. u can always google search cold recipes

I haven't tried this yet, but it's supposed to be really good. If he doesn't want it in a sandwich, you could just put some crackers or salad greens with it.





Margaux's Curried Chicken Sandwich

Makes 6 servings





It's Oprah's favorite sandwich in America!





INGREDIENTS


20 whole black peppercorns


2 bay leaves


2 whole cloves


1/2 lemon


3 pounds medium chicken tenders


1/2 cup plus 2 tablespoons spicy brown mustard


1/2 cup honey


1 1/4 teaspoons curry powder


3/4 teaspoons lemon pepper


1/8 teaspoons salt


Butter for spreading


1 loaf challah or other rich egg bread, cut into 12 thick slices


1/2 cup shredded carrots


1/2 cup slivered almonds


2 medium tomatoes, chopped


1 bag (about 5 ounces) mesclun salad greens


Red grapes and assorted berries for garnish





In a large saucepan over high heat, add peppercorns, bay leaves, cloves, lemon and 14 cups water; cover and bring to a boil. Add chicken and cook, uncovered and stirring occasionally, 7 to 10 minutes, or until cooked through; drain. Once cool, quarter each tender crosswise.





In a large bowl, combine mustard, honey, curry powder, lemon pepper and salt; stir in chicken. Cover and refrigerate at least 30 minutes, or up to 1 day.





Butter both sides of bread slices. In a heated nonstick skillet over medium-high flame, cook bread in batches 3 to 5 minutes or until browned, turning once.





Combine carrots and almonds with chicken mixture. Divide chicken curry among 6 bread slices. Top with tomatoes, mesclun and remaining bread slices. Serve with fruit.
If he likes vegetables, do a bunch of grilled/roasted vegetables, i.e. red onion, asparagus, bell peppers (red, green, orange, yellow), eggplant or what ever vegetable that he likes. As a side of pita bread or pita pockets with a roasted red pepper hummus or any other kind of spread and he can either make a sandwich or just eat them how ever he likes.





We also make an ';Italian Potato Salad';. Roast the potatoes in the the oven or boil them but only until they are firm. Let them cool. Mix them with olive oil, fresh minced or chopped garlic, diced red onion, pepper and salt to taste. Because there is no mayo or anything in it, it doesn't have to be refrigerated. It is best, in my opinion, served room temp but you can always do a minute or two in the microwave and you have great potatoes!

try some soup. It;s hot but if you get those soup cups it's a great way and if you get a good kind that costs a bit more they work great. The good ones may range from10 -30 dollars. Thermos is the best I've found.


Or try just tuna and crackers.
