Does anyone have any good recipes or dish ideas?

I am going over to my neighbor's house in a couple days, and I am not sure what to make. I don't know her very well, so I am not sure about her ';likes'; and ';dislikes';.





What would be a good dish to bring over? Maybe pasta?


And what would be a good dessert?





Oh, I almost forgot, she likes to eat only healthy things.

Garden Pasta Salad





1 (16 ounce) package uncooked tri-color spiral pasta


1/2 cup thinly sliced carrots


2 stalks celery, chopped


1/2 cup chopped green bell pepper


1/2 cup cucumber, peeled and thinly sliced


2 large tomatoes, diced


1/4 cup chopped onion


2 (16 ounce) bottles Italian-style salad dressing


1/2 cup grated Parmesan cheese





Cook pasta in large pot of boiling water until al dente. Rinse under cold water, and drain.


Mix chopped carrots, celery, cucumber, green pepper, tomatoes, and onion together in large bowl.


Combine cooled pasta and vegetables together in large bowl. Pour Italian dressing over mixture, add Parmesan cheese and mix well.


Chill for one hour before serving

Lemon-Lime Mousse





1/2 cup sugar


2 tablespoons cornstarch


Pinch salt


3 egg yolks


2/3 cup milk


1/4 cup lemon juice


1 tablespoon lime juice


1 1/2 teaspoons grated lemon peel


1/2 teaspoon grated lime peel


1 cup whipping cream, whipped


lime slices and additional lemon peel (optional)





In a saucepan, combine sugar, cornstarch and salt. In a bowl, whisk the egg yolks and milk; stir into sugar mixture. Add juices; whisk until smooth. Cook and stir over medium heat until mixture comes to a boil. Cook and stir 2 minutes longer. Add lemon and lime peel. Cover surface with plastic wrap; refrigerate until completely cooled. Fold in whipped cream. Spoon into individual dishes. Garnish with lime slices and lemon peel if desired.

Just be sure to trim off the fat from the chicken and it'll be healthy enough for your neighbour.





It doesn't take too long:


Preparation time less than 30 mins


Cooking time 30 mins to 1 hour





It serves 4, just multiple the recipe to how many people you need it for :)











Ingredients


For the casserole


4 chicken breasts


2 onions, 1 roughly chopped, 1 thinly sliced


1 carrot, roughly chopped


1 stick celery, roughly chopped


6 peppercorns


1 bay leaf


water, to cover


55g/2oz butter


30g/1oz plain flour


salt and freshly ground black pepper


1 x 220g/7戮oz can water chestnuts, drained


1 small head broccoli, cut into florets and blanched


1 free-range egg yolk, lightly beaten


2-3 tbsp double cream


squeeze lemon juice


1 tbsp chopped fresh parsley, to serve











Method


1. Place the chicken breasts, the roughly chopped onion, the carrot, celery, peppercorns and bay leaf into a large pan and add enough water to cover the ingredients.


2. Bring slowly to the boil, then reduce the heat and simmer for about 30 minutes, or until the chicken is completely cooked through.


3. Remove the chicken from the pan and set aside in a warm place. Reserve 450ml/16fl oz of the cooking liquid and set aside.


4. Heat half of the butter in a large pan and add the flour. Stir over a low heat until the mixture forms a smooth paste which leaves the sides and base of the pan cleanly. Gradually add the reserved cooking liquid to make a sauce. Season, to taste, with salt and freshly ground black pepper.


5. Add the water chestnuts and broccoli to the sauce.


6. In a bowl, mix the egg yolk with the cream and slowly add this mixture to the sauce. Add a squeeze of lemon juice and stir.


7. Cut the cooked chicken into bite-sized pieces and stir into the sauce.


8. In a separate pan, heat the remaining butter and fry the remaining thinly sliced onion until soft and golden.


9. To serve, sprinkle the onion over the casserole and garnish with parsley.
