My church is having a ';pot luck'; of sorts tonight and needed more food, so now i'm stuck on what to make. I don't want to make pasta or rice. I looked up recipes online, but got really fancy ones. if you have a simple to follow recipe, that doeasn't need fancy ingredients, please let me know. thanks in advance : )Need SIMPLE main dish recipes for tonight.?
Excellent Enchiladas
1 lb. ground turkey, browned with:
Sprinkle of garlic salt
Dash of cumin
1 onion, chopped
Dash of fajita seasoning
Dash of pepper
Add: 1 can cream of mushroom or chicken soup
Some green chilies
12 oz. salsa
Simmer. Heat flour tortillas and roll grated cheddar cheese inside. Place in a casserole and pour meat mixture on top. Sprinkle with more cheese. Bake twenty minutes at 350 degrees.Need SIMPLE main dish recipes for tonight.?
Sausage %26amp; peppers or fried chicken are pretty easy to make for a crowd.
Here is a Sausage %26amp; Pepper recipe...
48 ounces sweet Italian sausage links, pricked with fork
1/2 cup water
4 large green bell peppers, cut into strips (or use red bell peppers or combination of both)
4 large onions, cut into slices (not rings)
2 garlic cloves, finely chopped
1/2 teaspoon salt
Directions
In a skillet, bring sausage links and water to a boil over medium heat. Cover and cook 5 minutes. Remove cover and continue to cook, turning sausages frequently until water has evaporated and sausages are well browned, about 20 minutes.
Transfer sausages to paper towels to drain.
Pour off all but 1 tablespoon fat from skillet. Add green peppers, onions, garlic, and salt; cook over medium heat, stirring vegetables frequently until they are tender.
Add the cooked sausage to the peppers and onions and cook until sausages are hot again. Serves 12~

COPPER MOUNTAIN QUICHE
1/2 cup Butter
4 oz. Cream Cheese
1 cup + 2 Tbs. All-purpose Flour (divided)
10-oz package frozen Chopped Spinach
1 cup Cheddar Cheese, grated
1 cup Swiss Cheese, grated
3 whole Eggs, lightly beaten
1/2 cup Mayonnaise
1/2 cup Milk
1/2 jar Bacon Bits OR 10 slices Bacon, crisply cooked and crumbled
8 oz. fresh Mushrooms, sliced
1 bunch Green Onions or Scallions, trimmed and sliced
Combine the butter, cream cheese, and 1 cup of the flour in a small bowl. Mix with a pastry blender or fork, cutting the butter and cream cheese into the flour until a consistently crumbly mixture is formed.
Place the flour mixture in a 10'; pie plate or quiche pan, and press evenly to form a crust. Refrigerate. Pre-heat the oven to 350掳F.
Cook the spinach in a pot of lightly salted boiling water, drain well, and chop. Drain the spinach again on paper towels to remove all excess moisture.
In a large bowl, combine the spinach with the two tablespoons flour. Add the cheddar and Swiss cheeses, eggs, mayonnaise, milk, bacon bits or crumbled bacon, mushrooms, and green onions.
Pour the mixture into the chilled pastry shell and bake for 1 hour, or until set. Serve warm.
TOMATO QUICHE
3 large tomatoes, chopped
1 medium onion, finely chopped
3 Tb. butter
1 tsp. salt
1/4 tsp. thyme
1 8'; prepared pie shell
1/2 lb. Swiss cheese, diced
3 eggs, well beaten
1 c. half %26amp; half
Combine tomatoes, onion, butter, salt %26amp; thyme in a saucepan and cook over medium heat until mixture is reduced by half. Place cheese on bottom of prepared pie shell. Pour tomato mixture over the cheese. Mix eggs %26amp; cream and pour over tomatoes. Bake for 10 min at 425; reduce temp to 375 and bake another 35 min (or until set). Let quiche rest a few minutes before cutting.....
Do a potato salad:
* waxy potato boiled for at least 30 minutes in salty water; drained then cut to bite size
* chopped celery, bell pepper, onion etc. to taste
* sauce = mustard (yellow French is fine) + mayo LATER + pepper + lemon juice
mix them all up just before serving, add freshly minced parsley or anything you have =

Try these open faced sandwhiches:
1-2 lbs. diced ham
1 bag mixed cheese
1 egg
splash of mik
Stir to combine. Spread on top of store bought or homemade garlic bread. Bake in 350 degree oven for about 1/2 hour to 40 minutes or until cheese is brown and bubbly. Reheat in oven briefly when you get to church just to warm them back up. Serve with soup tomato soup if you wish!
Since you need it tonight, any answer you will get is probably late. Next time, get a cookbook so you don't get stuck or visit any of the web sites offering recipes.
Basil Chicken With Fresh Tomato Sauce
Ingredients
25-30 fresh basil leaves (rinsed)
2 large tomatoes (rinsed)
4 boneless chicken cutlets
1 teaspoon kosher salt, divided
1/2 teaspoon pepper, divided
2 tablespoons extra-virgin olive oil, divided
2 teaspoons + 1 tablespoon minced garlic
4 teaspoons balsamic vinegar
Steps
1. Preheat 2-sided tabletop grill. Chop basil (about 6 tablespoons) and tomatoes coarsely. Place tomatoes and 2 tablespoons of the basil in food processor (or blender); set aside.
2. Season both sides of chicken with 1/2 teaspoon of the salt and 1/4 teaspoon of the pepper (wash hands).
3. Combine in shallow bowl: 1 tablespoon of the oil, 2 teaspoons of the garlic, and remaining 4 tablespoons basil. Add chicken (wash hands); turn to coat evenly. Marinate 10 minutes, turning occasionally.
4. Place chicken on grill (wash hands); discard any remaining marinade. Close lid and grill 5鈥? minutes, or until internal temperature of chicken reaches 165掳F. Use a meat thermometer to accurately ensure doneness. (If using regular grill, double cooking time, turning once.)
5. Meanwhile, process tomato-basil mixture with remaining 1 tablespoon oil 10 seconds or until smooth. Add vinegar and remaining 1 tablespoon garlic, 1/2 teaspoon salt, and 1/4 teaspoon pepper; pulse 2鈥? times or until just blended. Serve sauce with chicken.

Asian Chicken Tenders
Ingredients
1/2 teaspoon seasoned salt
1/2 teaspoon five spices powder
1 (7 1/2-ounce) jar duck sauce
2 tablespoons teriyaki sauce
1 pound chicken tenderloins
Steps
1. Preheat 2-sided tabletop grill.
2. Combine in medium mixing bowl: seasoned salt, five spices, duck sauce and teriyaki sauce. (Reserve 1/4 cup for dipping.)
3. Using tongs, add chicken and fully coat with marinade. Marinate at least 10 minutes.
4. Place chicken on grill, discarding bag and marinade. Close lid and grill 3-4 minutes, or until internal temperature reaches 165掳F. Serve with reserved dipping sauce.
Honey-Glazed Carrots
Ingredients
1 (16-ounce) bag baby carrots
1 tablespoon butter
1/4 cup honey
1/2 teaspoon seasoned salt
1/4 cup light brown sugar
Steps
1. Place in microwave-safe bowl: carrots, butter, honey, seasoned salt and brown sugar.
2. Cover, and microwave on high for 5 minutes.
3. Remove from microwave and stir. Microwave an additional 5 minutes. Serve.
Tropical Fruit Rice
Ingredients
1 (15 1/4-ounce) can tropical fruit salad (drained)
1 1/2 cups water
2 cups instant rice
salt and pepper, to taste
Steps
1. Place fruit in medium saucepan.
2. Add water. Cover and bring to boil on high.
3. Stir in rice. Cover, remove from heat and let stand 5 minutes.
4. Season with salt and pepper; serve. (Makes 6 servings.)
