Im not a vegetarian, I just don't want to put meat in the noodles.Does anybody know any meatless noodle side dish recipes?
Parsley buttered noodles is a really good and simple side dish. After draining the noodles, return them to the pan and add some butter and parsley. Toss to combine and serve. The heat of the pan melts the butter. I normally try to remember to put the butter into the pan before I put the noodles back in to give it a head start on melting.
A family favorite of ours is any form of kugel. I think we like this one best from Epicurious because we all get the crispy edges since it's baked in a muffin pan.

This is a great little Mediterranean pasta dish I've made several times and loved.
Ingredients
Penne Pasta
Sun dried tomatoes
spinach (1 bag)
Pine Nuts
Extra Virgin Olive Oil
Salt and Pepper
Basil (3 to 4 leaves)
garlic (1 clove)
Boil penne in salted water. Toast pine nuts in oven at 350 for 10 mins. In another pan (medium high), add EVOO (enough to coat the bottom of the pan), chopped garlic, and a pinch of salt%26amp;pepper. Once garlic is ';melted'; in oil, add chopped sun dried tomatoes and chopped basil. Mix well. Add spinach and fold in until it is cooked down.
Once everything is cooked, add pasta, Tomato and spinach mix (including oil), and pine nuts into a bowl. Mix together. Add a drizzle of EVOO over pasta and top with some grated Parmesan.
Noodles and Basil Cream Sauce.
Make noodles. Combine 1/4 C. sour cream, 1/2 C. milk, 1 Tbsp. basil pesto sauce, 1 Tbsp sun-dried tomatoes, 1 tsp. Wondra flour and 1 tsp salt. Microwave to heat, then stir. Combine with noodles.
Love noodles and cabbage!
Alfredo would be nice.
