Hi,
I am a volunteer at a local charity called meals on wheels. We provide meals for elderly people who can not shop and cook for themselves. I am looking for new recipes. The food should not take longer then 2 hour max to prep and cook. If you know of websites that provide recipes for this type of thing I would love to know about them!
Thank you for all your help!I need simple main dish recipes to serve 20 people?
http://allrecipes.com/Recipe/ has over 1700 casserole recipes..nutritional info.. and scaling recipes is as easy as clicking your mouse! They are all rated by other users who have tried them. They have many other recipes as well. Here is an example...
Broccoli Chicken Divan (scaled for 20 servings)
INGREDIENTS
3-1/4 pounds chopped fresh broccoli
5 cups cubed, cooked chicken meat
3-1/4 (10.75 ounce) cans condensed cream of broccoli soup (I would use low sodium)
1 cup and 2 tablespoons milk
1-2/3 cups shredded Cheddar cheese
3 tablespoons and 1 teaspoon butter, melted
1/3 cup and 1 tablespoon and 1 teaspoon dried bread crumbs
DIRECTIONS
Preheat oven to 450 degrees F (230 degrees C).
Place the broccoli in a saucepan with enough water to cover. Bring to a boil, and cook 5 minutes, or until tender. Drain.
Place the cooked broccoli in a 9 inch pie plate. Top with the chicken. In a bowl, mix the soup and milk, and pour over the chicken. Sprinkle with Cheddar cheese. Mix the melted butter with the bread crumbs, and sprinkle over the cheese.
Bake in the preheated oven for 15 minutes, or until bubbly and lightly brown.I need simple main dish recipes to serve 20 people?
Most recipes will be for chicken or pasta, as they will stay
warm longer, with out degrading.
chicken and noodle, chicken and dumplings, chili ,stew, chicken pot pie, spaghetti, any kind of soup, beans, meatloaf, sheperd's pie
I think the websites that have been suggested are good ones. But, here is a good meat loaf recipe for 20-24
8 eggs, beaten
1can 46 oz v8 juice
2 large onions, finely chopped
4 celery ribs finely chopped
2 envelopes onion soup mix
2 tsp pepper
8 lbs ground beef
3/4 c ketcup
1/3 brown sugar
1/4 c prepared mustard
Combine ingred minus the last 3. Place into 4 9x13 pans Bake uncovered at 350 for abt 45 minutes. Combine last 3 ingred and spred over loaves and bake additional 15 minutes.
Serve with baked, boiled or mashed potatoes, a jello and cookie
2. Baked chicken. 20 thighs seasoned with Lawrys and put in buttered pan and bake at 400 turning midway. Again with potatoes.
3. Meatballs and rice. (6 cups uncooked rice should make enough) Storebought meatballs (or my recipe using 2 lbs ground beef) makes 48 meatballs so you can figure that out. Pour some Prego over top and sprinkle w cheese or use cream of mushroom soup, diluted over top sprinkle with chopped parsley.
Good luck, and God Bless
Thanks very much for your work with Meals On Wheels! My church takes a rotation a few times each year - I work during the day so I don't have the opportunity to deliver but I've always admired anyone who gets involved!
Okay, recipes... casseroles are usually pretty easy and bisquick has some really simple IMPOSSIBLE PIES that are very easy to put together. But they usually serve 6-8, so you'll need to double up. These recipes are usually pretty forgiving. The first link is for Bisquick recipes.
Food Network has a huge selection of recipes. The party section may help you get more bang for the buck. That's the second link.
Good luck!!
