Vegans/Vegetarians - what is one of your favorite main dish recipes for summer time? Quick/Easy but good?

I am neither Vegan nor Vegetarian, however, I would like to cut down on the amount of meat my daughter and I eat each week - we're attempting to cut down to including meat in only 3 meals each week.





I am looking for recipes that include easy to find ingredients and are easy to easy/moderate skill level to prepare.Vegans/Vegetarians - what is one of your favorite main dish recipes for summer time? Quick/Easy but good?
Coconut Mango Rice! Super simple and tasty :) Nice for a light lunch or dinner. You can pair it with a salad too! You'll need one can of light coconut milk, one cup of jasmine rice, and 1/4 tsp nutmeg. Bring coconut milk to a boil, add nutmeg and rice. Stir. Cover and simmer 20 min. Done! Add frozen mango chunks (thawed) or any other fruit to it. Very taste and easy. All ingredients can be found at Walmart or Kroger. I love veggie kabobs on the grill. I make them simple because I think the grilled veggies taste good that way. I pick out my favorites which are brocoli, zucchini, yellow squash, cherry/grape tomatoes, onions, peppers, and sometimes pineapple. I cut them into bite sized chunks, put them on skewers, and then marinate them in olive oil and italian seasoning. Add some salt and pepper. Throw them on the grill until they are nice and done. Yum!
I just found these veggie patch meatballs that are awesome and so easy! I box whole wheat spaghetti, some pasta sauce, and these, yummm!! I hate running the oven in the summer. I just discovered smartdogs also which are super healthy and awesome on the grill!
Veggie Chili, it's like regular chili without the meat.

Most fruits and veggies are super easy to grill. Try them in different ways - eg. kebobs, sliced right on the grill, mixed together in a veggie basket and grilled indirectly. The flavours vary depending on technique, and there's so many options. Eggplant grilled with some sea salt and olive oil is surprisingly ';meaty';. Portobello mushrooms, brushed will olive oil, some spices and a splash of balsamic vinegar can be a great replacement on a bun for burgers.


Grilled pineapple makes an awesome dessert too!





Tofu grills up very easily and is so tasty. I just marinate extra firm tofu in my favourite sauce for an hour (I find the brand I use doesn't need draining), cut into thick slices, and grill directly.





Summer is also a great time to make veggie-laden salads. Try different grains or pasta mixed with chopped peppers, cucumber, tomato, olives. Add beans or legumes for more fibre and protein. We almost always have a big bowl of some kind of this kind of salad in the fridge - today is israeli couscous, red pepper, yellow, pepper, black olives, green onions, chives, cucumber, celery, mixed with a grapeseed oil/basil/grapefruit juice/honey dressing I quickly whipped up. On the weekend, it was brown rice spirals with broccoli and peppers and a veganiase dressing. The only limit is your imagination! Try grains that you would normally have warm - brown rice, quinoa, millet and couscous all make awesome cold salads.





You can easily make summer type wraps with lots of different sliced veggies, and won't miss the meat at all. If you're feeling adventurous, try some of the grilled tofu in there, or buy/make some seitan. Seitan grills up beautifully as well, and can be fed to the most hard-core meat eater pretty convincingly as meat.





Another easy thing to do is hollow out zucchini or peppers, and fill with brown rice, the zucchini and pepper guts, garlic, black beans, and tomato sauce. Grill indirectly. You can top with soy cheese or cheese if you like. Simple, and very yummy.
