Good one dish recipes that can be made ahead.?

Tired of eating out and would like some one dish meal ideas that I can assemble in the morning and and have my husband put in the oven in the evening so that I can have a hot meal when I get in. Input is really appreciated.Good one dish recipes that can be made ahead.?
These can be made the night before and bake in the morning; or when he gets home he can bake and have it fresher





Chicken Ritz Casserole





Ingredients:


5-6 chicken breasts, cooked


1 can cream of chicken soup


1 can cheddar broccoli soup


about 1/4 soup can of milk


1-1/2 c. sour cream


2 c. cooked minute rice (1 c. prior to cooking)


dash salt and pepper


30 to 40 Ritz crackers, crumbled


Butter


Cooking Instructions:


Cook chicken and remove chicken from bone and cut up. Place chicken in casserole dish. Mix together remaining ingredients. Pour mixed ingredients over chicken. Top with crushed Ritz crackers; dot with butter. Bake at 350F. for 45 mins.

Overnight Hashed Brown Potato Casserole








2 lb Frozen hashed brown potatoes


1/4 lb Butter


1 pt Sour cream


1 cn Mushroom soup


8 oz Chedder cheese; shredded


1 Onion; grated


3/4 c Milk








Instructions





Cut butter into potatoes. Mix rest of ingred. together; pour over top of potatoes. Toss. *1/4 - 3/4 c. milk can be used in place of one-half of the sour cream. It will make a moister casserole, if desired. Bake in a 13x9'; pan @ 350 for 1/2 hr covered and an additional 1/2 hr. uncovered. I have used Cheddar Cheese soup, but reduce the butter as it will be greasy with both. I also put additional shredded cheese on top during the second half hour of baking. Doubles well. Can be refrigerated overnight after mixing all together.

Casserole





1 (7 oz.) pkg. macaroni, uncooked


1 can cream of celery soup


1 can cream of chicken soup


1/2 lb. cheese, shredded


2 c. milk


2 c. chicken or tuna, cut into sm. pieces


1 lg. onion, diced





Mix all ingredients together. Refrigerate at least for 1 day. Bake at 325 degrees for 1 hour.

Other freezer recipes that hold up really well, and then all I have to do is pull dinner out in the morning, let it defrost in the fridge %26amp; pop it in the oven after work. Usually, I still have to make a side dish or two, but it is still so much more convenient to be able to make 2 things %26amp; have the entree already prepared.

Stuffed Peppers (cooked %26amp; easy to reheat in the microwave)

Steak Fajitas (the filling not w/ the tortillas)


Pepper Steak (cooked or raw)


Meatballs (cook them before you freeze them)


Hamburgers (shape them, but don't pre-cook)


Meatloaf (mix meat together, but don't pre-cook)

This used to be a favorite at our holidays and can be made ahead of time.


You will need a pack of wonton shells, any grocery store should have them.


1 pound of pork sausage


1 cup of ranch dressing


1 3/4 cups of chedder and montery jack blended cheese shredded


1 small can of sliced black olives





You take the wonton shells brush them with oil whichever you prefer. Put them in a muffin tin, and bake them at 400 degrees until brown and crispy. Take them out and set aside


Take the sausage and scramble it make sure it is fully cooked drain off the fat and pour in the bowl. Now combine the ranch dressing, cheese and black olives. Stuff the mixture in the shells and put on a cookie sheet. Just before serving, place them in a 350 degree oven for 5 minutes, serve hot and enjoy.

You could slightly under-cook the meat and the noodles in this dish, spray a dish with release spray (Pam) throw the ingredients together, cover with foil and refrigerate it. When hubby comes home, have him put it in a cold oven, turn the heat to 350F and bake for one hour.





Cook boneless skinless chicken breasts in a skillet with a little oil about 4 minutes per side on medium heat. Add one chopped onion, cook briefly and add 1 cup of chicken broth. Cook about 3 minutes then add one jar of spaghetti sauce. Turn heat to low, cover and let simmer until chicken is done, approximately 20 minutes. Meanwhile, cook some spaghetti following directions on the box. Drain the pasta and serve the chicken and sauce over the pasta. Bagged salad and some Italian bread complete the meal. This is not my recipe 鈥?another member of the YA community posted it.
- Chicken pieces (thighs, legs, breasts - can also be substitued with beef stew meat or pork)


- Carrots, peeled and cut into bite sized, medium pieces


- Potatoes, peeled and cut into bite sized, medium pieces


- Celery, peeled and cut into bite sized, medium pieces


- Onions, diced largely


- Frozen peas %26amp; carrots


- Barley (2 - 3 tablespoons, depending on how much you'd like - optional)


- 1/2 cup of wine, red or white is fine (optional)


- 2 tablespoons of tomato paste


- vinegar (just a splash or more depending on your tastes)


- Salt (to taste)


- Pepper (to taste)


- 1 1/2 to 2 cups of Water


(I'm not exactly sure on the proper measurements for each ingredient... I just usually use my best judgement - so as ever much of each ingredient as you feel is best)





Add all ingredients together and bring to boil.... lower to medium heat and allow to simmer. (You can freeze this). Serve with mashed potatoes or rice or both.
MmmHmmm, I know how you feel. Meatloaf is great and you can make a bunch of them and freeze them. You can even add veggies into the meatloaf. You can make cannelloni (the hard shells stuffed with meat or cheese) and then bake them in tomato sauce. Have you thought about using a slow cooker? Hope that helps!
