Does anyone have any good recipes for a dish named Kleftiko?

Had this quite a few times while in Cyprus but the recipes tried over here are just not the same :-(Does anyone have any good recipes for a dish named Kleftiko?
';Bandit's Lamb';


This dish was made by bandits in the mountains of Greece who dug a hole, put hot coals in and then put a whole lamb in, skin on, entrails removed and whatever veggies they could find, put in the cavity. Then covered with earth. No smoke, no giveaway to their location.





But, now we use the modern interpretation.





KLEFTIKO





* 4 pound leg of lamb


* 10-12 cloves of garlic, peeled


* 6 ounces of cheese (kefalotyri, pecorino) cut in cubes


* 1 tablespoon of olive oil


* 4 pounds of roasting or baking potatoes, peeled, cut in half or quarters


* 3 medium carrots, cut in chunks


* sea salt


* freshly ground black pepper


* 4-5 sheets of parchment cooking paper


* water





PREPARATION:





Preheat the oven to 480F (250C).





Rub the lamb with a little olive oil, and sprinkle with salt and pepper to taste. With a sharp knife, pierce the lamb and insert a clove of garlic and a piece of cheese into each opening.





Drizzle the potatoes and carrots with any remaining oil, season to taste with salt and pepper.





On a clean work surface, spread out the parchment sheets and lay the lamb in the center, with the potatoes and carrots. If there is any remaining cheese and/or garlic cloves, add as well. Close the parchment paper and secure well with paper clips or a stapler, tucking the sides underneath to make a packet.





Fill a roasting pan 1/3 full of water, add the packet and cook for 2 hours 30 minutes, adding more water to the pan as needed to keep from getting dry.





When done, lift the entire packet onto a serving platter, and cut open at the table to serve.





Yield: serves 4





ALTERNATE PREPERATION: Cut meat into serving size portions and wrap each portion, together with portion-size serving of potatoes and carrots, and other ingredients, individually. Set side by side in roasting pan to cook, and serve one packet to each plate.Does anyone have any good recipes for a dish named Kleftiko?

If you use Chops it's just like the Cyprus dish. And of course roast potatoes
put it in google %26amp; you should get some ideas from there,I've got afew recipes from there,good luck %26amp; enjoy.
1 lemon, juice of


1 tablespoon chopped fresh oregano


1 teaspoon salt (or, to taste)


1/2 teaspoon ground black pepper


4 lamb leg steaks or lamb chops (bone-in)


2 tablespoons olive oil


2 large onions, thinly sliced


2 bay leaves


2/3 cup dry white wine


2 cups plain flour








Mix together the lemon juice, oregano and salt and pepper and brush over both sides of the lamb.


Leave to marinate for at least 4 hours or overnight.


Preheat oven to 325 F.


Drain the lamb, reserving marinade, and dry lamb with paper towel.


Heat olive oil in frying pan and cook lamb over high heat just until browned on both sides.


Transfer the lamb to a shallow pie dish.


Scatter the sliced onions and bay leaves around the lamb, then pour the white wine and the reserved marinade on top.


Mix the flour with sufficient water to make a firm dough.


Moisten the rim of the pie dish.


Roll out the dough on a floured surface and use to cover the dish so that it is tightly sealed.


Bake for 2 hours, then break away the crust and serve the lamb hot.


Potatoes make a great accompaniment.
Mmmmm...I live in Cyprus....and still struggle to get it right myself!! there are lots of recipies to follow....all tasting good, but I have just bought myself a 'tagine'.....its a Moroccan type cooking vessel, but its the nearest thing i could find to having a traditional cypriot clay oven.....and believe me, the longer you can cook the lamb on a low heat, the better it tastes. A Cypriot neighbour here cooks hers for at least eight hours!!!


And it melts in your mouth! i'm so jealous!!

There is a show on Discovery here (since this is posted in the YA UK I take it ';here'; is the UK) called My Greek Kitchen which is done by a greek cypriot woman called tonia buxton.


I have scribbled a few of her dishes down in the past and they are PDG. I believe you can watch her recipes on the discovery broadband site and I know she has done lamb Kleftiko.


Restrictions here at work mean I can't get into the site but just do a yahoo search on the show and go to the Discovery Broadband result.


We also brought a cook book back from Cyprus last time we were there. Keopaste or something. Well worth the money.
