Low-fat would be sweet, I'm kinda trying to lose a little weight.What are some of your favorite vegan recipes/dishes?
Here's a low-fat, easy vegan recipe. I use a 12.3 ounce package of Mori-Nu tofu, but if you don't have that at home, you could make it with another tofu brand.
Tofu Scramble
1 box Mori-Nu silken firm tofu, patted dry and mashed
1/8 tsp. turmeric
1 tsp. onion powder
1/2 tsp. salt
1/2 cup or more of veggies. (I use bell peppers. You can use your favorite veggies -- tomatoes, broccoli, fresh mushrooms, onions, etc.)
Place the tofu in a lightly oiled saut茅 pan and cook over medium heat for 3 minutes. Add the remaining ingredients, stir well, and cook for 5 to 8 minutes, until the vegetables are cooked and the tofu is heated through.

peanut ginger glazed tofu-found on yahoo food, i tried it and it is very good and super easy, just make extra sauce and add more heat if you like spicy
google coconut tofu curry, just make sure to use light coconut milk. i also added pineapple chunks and lemongrass, and it was DElicious!! My vegan friend said it was better than PF Chang's and gave me SIX stars!!!!
