menudo as far as I know is a Mexican tripe soup often served on Sundays as a hangover cure at many Mexican restaurants.My dad is looking for a good recipe for this filipino dish called Menudo, full recipes would be appreciated.?
as i expected i am a filipino....the menudo dish is compost of





pigs liver(chopped into diced),


some porks(chopped in to diced,


raisins,


hotdogs(at least 5 pcs.chopped into diced),


tomato sauce(3 or 2 packs will do),


water(2 cups will be enough),


cornstarch(mix it with water,must be equal amount)


onions(chopped in desired big)


carrots(chopped into diced)


green bell pepper(chopped into the diced,1 pc. is enough)


sugar,salt,pepper,cooking oil





in the casserole,fry the onions with the cooking oil until light brown


mix up the livers,porks,and the hotdogs,


if you think that the meats are cook pour in the tomato sauce boil it for a while then put the water.


add the carrots,raisins, sugar,salt,pepper and the green bell pepper then boil it until the is soft enough for your dad


stir in the cornstarch solution you made while stirring the menudo


cook it for 5 minutes then serve hot....





TIPS %26amp; WARNINGS:


avoid the onions to become dark brown or else the dish will be taste bitter


put only a little amount of sugar, salt and the pepper(because you already put raisins)


make sure that the cornstarch solution is well mix with the water or else there will be ''sipon'' or phlem on your dish(it was not realy a phlem it look like a phlem)


make sure you taste the dish for every 11 minutes

Ingredients:





1/4 kilo Pork cubes


1 can Tomato sauce


3 pcs Chorizo, sliced


1 can chickpeas


1 green bell pepper


1 large potato, diced


1 large carrot, diced


onions and garlic


salt and pepper to taste


1 cup water





Saute onions and garlic in oil until onions are tender. Add chorizo and saute for 1 minute. Add pork cubes and saute until pink color is gone. Add bell pepper and saute for 1 minute. Add tomato sauce and 1 cup water. Add carrots, chikpeas and tomatoes. Boil, then simmer until pork is completely cooked. Season according to taste.
