Its just about supper time,so Im tryin to cook this for the family.I dont want to go there and eat so I just wanted to make it at home.Anyone know the recipe for Red Lobsters-Aztec Chicken?I absolutely loved this dish.Any tips or recipes?Thanks!

Applebee's Aztec Chicken Salad
戮 lb boneless skinless fresh chicken breast
chipotle rub from specialty store, to taste
1 oz vegetable oil
1 lb chopped salad greens, washed
2 oz red bell pepper, cut 录'; dice
2 oz green bell pepper, cut 录'; dice
2 oz red onions, cut 录'; dice
2 oz corn kernels fresh or thawed frozen
2 oz celery, cut 录'; dice
2 oz black beans, drained, rinsed
2 cups tri-color corn tortilla strips
1 cup smoky tomato vinaigrette,= (or dressing of your choice)
4 oz shredded pepper jack cheese
1 Heat oil in skillet over medium heat. Rub chipotle spice over chicken breasts and cook in skillet to a 165 degree internal temperature.
2 While cooking, begin preparation of salad by thoroughly cleaning and sanitizing sink. Rinse and wash all vegetables in cold, 40 degree water with 陆 cup of salt and 陆 cup of white vinegar. Drain.
3 Clean and sanitize cutting board and knife. Chop salad greens into 1'; x 1'; squares. Trim peppers, onions, celery and dice into 1/4'; cubes and place into large mixing bowl. Add greens, corn, black beans, tortilla strips and dressing and gently mix with a spatula.
4 Mound salad onto plate and top with pepper jack cheese. When chicken is thoroughly cooked, dice into 陆'; cubes and add to top of salad just prior to serving.
Regular Aztec Chicken Recipe
Aztec Chicken
1 pound boneless, skinless chicken breasts
1 1/2 cups frozen chopped spinach, thawed and squeezed dry
4 tablespoons canned green chiles, chopped
1 cup shredded mixed cheeses
4 tablespoons cream cheese
1/2 teaspoon salt
3 tablespoons melted butter
Salt and pepper, to taste
Chipotle Lime Sauce
Preheat oven to 350 degrees F. Lightly pound chicken breasts to flatten, and set aside.
In a medium bowl, combine spinach, green chiles, shredded cheese, cream cheese and the 1/2 teaspoon salt. Place mixture in the center of each chicken breast and carefully roll up. Place seam side down on a lightly greased sheet pan. Brush with melted butter and season with salt and pepper. Bake for 15 to 20 minutes, until chicken is cooked thoroughly. Let stand 10 minutes before slicing.
Serve with Chipotle Lime Sauce.
Makes 4 servings.
Chipotle Lime Sauce
1 teaspoon shallot, chopped
1/4 teaspoon garlic, chopped
1 teaspoon chipotle peppers in adobo sauce, chopped
1 teaspoon fresh lime juice
1 cup heavy cream
1/2 teaspoon chicken base or bouillon granules
1/2 teaspoon cornstarch
1 teaspoon cold water
Process shallot, garlic, chipotle pepper and lime juice in a food processor until smooth. Place in a small saucepan and add cream and chicken base. Bring to a boil, stirring frequently.
In a small dish, combine cornstarch and water. Add to cream mixture and simmer 1 minutes.
Makes about 1 cup.

if you had more time i would suggest calling up the company and asking for the ingredients. the cook where i used to work figured out the olive garden Tuscan soup recipe by calling them up and saying she had food allergies and a friend wanted her to try the soup so she wanted the ingredients.
after that she just estimated the recipe.
