OMG miso katsu sounds awesome-I was going to make pork curry for dinner, but I'm switching to Miso Katsu instead.
I do not have a true recipe, but here's my plan:
Prepare the miso sauce in small pan over med-low heat: red miso, sweet mirin wine, dashi (bonito soup base), sugar to taste. Basically a miso ';BBQ'; sauce.
Then Pan fry pork slices (I pound mine flat first, then dip in flour, egg wash, then Panko bread crumbs; fry in an inch of canola oil-turn once and drain on wire cooling rackHow can I make miso-katsu... the Nagoya dish of pork cutlet covered with a red miso based sauce? Any recipes?
