Yep... an old favorite standby:
1lb smoked sausage, sliced or diced
2 boxes au gratin potato mix
16oz bag frozen mixed vegetables
Prepare potato mixes, in greased 9x13 in casserole dish, according to package directions, up until time to bake it. Add smoked sausage and frozen vegetables. Bake according to potato directions.
I take this to those covered dish dinners all the time and it's gone in a flash!
Cut into thin slices, add to can or cans or Pork 'n' Beans, season with salt, pepper, garlic salt and Worcestershire sauce. Stir and let simmer on low for about 15 minutes. Serve with canned fruit or simple, green salad.

Anytime I make smoked sausage, I cut them up in big chunks and fry them in a little oil. Then I make a couple of bags of Lipton cajun rice and add onion, green pepper, some halved cherry tomatoes (be sure to cook in chicken broth instead of water!). Add the sausage at the very end and let them cook with it for a little while. Heck, you could even add some shredded cheese to it, if ya want! Hope that gives you some ideas! :)
This one's great and very quick and easy:
Hearty Sausage Skillet
1/2 lb. smoked sausage, such as kielbasa, sliced
1 can (14-1/2 oz.) diced tomatoes, undrained (for a spicy version use Rotel)
1-1/2 cups water
1 tsp. Italian seasoning
1 pkg. (12 oz.) VELVEETA Shells %26amp; Cheese Dinner
2 cups broccoli florets
BROWN sausage in large skillet on medium-high heat 5 min.; drain.
STIR in tomatoes with their liquid, the water and seasoning. Bring to boil. Add Shells. Reduce heat to medium-low; cover.
SIMMER 7 min., stirring every 3 min. Add broccoli; cook an additional 5 min. or until tender. Stir in Cheese Sauce until well blended.
Kraut and sausage have always been popular, but we like:
1 lb smoked sausage, cut into 1/2 inch slices,
1 large sweet pepper (red, gold or green) sliced
1 med onion, sliced
1 t. brown sugar
1 T veg oil or canola oil or any other oil
sautee over med heat until veg and sausage are browned.
Mix with 2 cups leftover mashed potatoes and 1 egg, mix well and bake at 350 for 25-30 min.,
Or.......easier......dump into boxed au grautin boxed potatoes, follow package instructions to mix then put in sausage and bake.(not as good, but filling)
Get the Jambalaya rice kit by Zataran's or something like that. White and red box at walmart. Cut up the smoked sausage and DINNER in no time.
What about smoked sausage subs with green peppers and onions and put mustard on top. Another idea is jambalaya with sausage.
