For a potluck dinner event......im a big fan of southern comfort, italian, or yummy and fattening to put it simple....but i guess whatever is easy and that many people would enjoy eating?

My Moms all time favorite dish that she would make for Sunday potlucks and everyone just had to have the recipe is her Mexican Chicken casserole and you can substitute and still have it taste so yummy
Either boil up your whole chicken and reserve some juice for the tortillas or you can buy a rotesserie chicken or chicken breasts- cut them up or shred them and set them aside
You can either crush up your favorite tortilla chips or lay out in a buttered casserole dish your wrm corn tortillas. I personally like to tear mine up and then pour over enough chicken broth to get them moist
In a big pot-
1 can of mushroom soup
1 can of cream of chicken soup
1 medium container of sourcream
1 can of mild diced green chilis
1/2 cup if your favorite salsa
finely choped tomatoes of your choice- Usually 1 very large one will do
1 can of chopped black olives
Your favorite cheddar cheese shredded
You can add milk until the right consistency.
Don't forget to add the chicken back in.
You mix pour the mixture over the tortillas and cover with cheese and more crushed chips if you would like.
Bake at 350 degrees until bubbly and brown. Oh this is oh so good. Since everything is basically cooked it just needs to heat thru and get crispy on top.
This can be made ahead of time and actually is better if you let it set for a few hours in the firdge to get all the juices flowing. Oh yummy. Freezed beautifully and can even eat it cold.
Serve with a nice green salad and crunchy bread.
You can also do this recipe and add in rice instead of the tortillas. It is so good.Covered dish recipes???

2 lbs. frozen hash browns, Southern style (thawed)
1 stick melted butte
1 tsp. salt
1/2 tsp. pepper
1 can cream of chicken soup
1 pt. sour cream
1/2 cup chopped onion
10 oz package shredded cheddar cheese
Topping:
1 Cup crushed corn flakes
3 tbsp. melted butter
preheat oven to 350. Mix all ingredients. Arrange in baking dish, (9x13). Sprinkle whth cornflakes. top with butter. Bake for 1 to 1 1/2 hours.

I thought you would get tons of great recipes, so I tried to think outside the box, things that keep the one dish theme. I love casseroles, and easy throw together things, people laugh at my throw it in, sure lets add that technique but noone has ever stopped coming back to try something new. Good luck. You are the cook, you are in charge. Who knows what you like than more thna yourself, yes its nice to get new ideas, but never feel trapped into the recipe. Make your own speciality dish
HAM-CHICKEN COMPANY CASSEROLE
1/2-inch slices ham (to cover bottom of 9 x 14-inch dish)
4 chicken breasts, boned and skinned
Processed Swiss cheese slices (no holes)
1 can cream of chicken soup
1/4 c. dry white wine
2 c. Pepperidge Farm stuffing mix
1/2 c. melted butter
Place chicken breast pieces over ham. Cover with slices of cheese. Mix soup with wine and pour over. Crush stuffing mix and pat over top. Drizzle melted butter over top. Bake uncovered at 350 degrees for 1 hour. Serves 8.

1 c. crushed pineapple
3 eggs, beaten
1 lb. mashed sweet potatoes
4 tbsp. brown sugar
5 tbsp. peanut butter
Dash of salt
1/2 c. miniature marshmallows
1/4 c. chopped, dry roasted peanuts
Drain pineapple. In blender, mix with eggs, sweet potatoes, brown sugar, peanut butter and salt; pour into an 8 x 8 inch buttered pan. Top with marshmallows and peanuts. Bake at 350 degrees until heated through and marshmallows are melted and golden brown. An unusual and delicious side dish.
POT LUCK VEGETABLE CASSEROLE
1 (17 oz.) can whole kernel corn
1 (10 oz.) pkg. cauliflower, cooked
1 (10 oz.) pkg. cut broccoli, cooked
1 (4 oz.) sliced mushrooms
1 (17 oz.) can cream style corn
2 c. shredded Swiss cheese
1 (10 3/4 oz.) can cream of celery soup
2 tbsp. butter
1 1/2 c. soft bread crumbs
Drain whole kernel corn, cooked cauliflower, cooked broccoli and mushrooms. Cut up any large pieces of cauliflower. Combine cream style corn, cheese and soup. Fold in drained vegetables. Turn into a 12 x 7 1/2 x 2 inch baking dish. Melt butter, toss with crumbs and sprinkle atop mixture. Bake uncovered at 375 degrees for 30 to

1 c. sugar
1 c. flour
1 tsp. soda
1/2 tsp. salt
1 egg
1 can fruit cocktail, well drained
1/2 c. brown sugar
1/2 c. nuts
Combine sugar, flour, soda and salt. Add egg and fruit cocktail. Pour into an 8 x 8 inch pan. Top with brown sugar and nuts. Bake 1 hour at 300 degrees, cut into squared and serve with whipped cream or ice cream. Can be made 2 or 3 days ahead, store in refrigerator

Easy Potato Covered Dish Recipe
1 32 oz pkg frozen hash browns
1 8 oz sour cream
1 egg
2 cups shredded colby jack cheese or cheddar
1 can Campbells cheese soup (or your choice)
Mix together and pack firmly into a greased baking dish, 9x12';. Bake at 350掳F for 30-40 minutes or until brown on top. This dish is easily doubled, but do not double sour cream. Instead, add a different soup--mushroom and cream of chicken are good.
*******SMOKED SAUSAGE ANTIPASTO SALAD
1 to 1 1/2 lb. Hillshire Farm lite or regular smoked sausage, any variety, sliced 1/8 inch thick
3/4 c. Italian salad dressing
6 c. lettuce, torn
8 leaves Romaine lettuce, torn
3 tomatoes, cut into wedges
1 cucumber, sliced
1 carrot, peeled and sliced
1 c. cauliflower pieces
3 oz. black olives
4 green onions, sliced
4 oz. Feta cheese, crumbled (optional)
Brown Hillshire Farm smoked sausage in a skillet and drain well on paper towels. Arrange lettuce on a large serving dish and top with vegetables and sausage. Add Feta cheese, if desired. Pour dressing over salad and serve immediately. Makes 4 to 6 servings.
Total preparation and cooking time: 15-20 minutes.
VARIATION: For a spicier salad, try Hillshire Farm smoked sausage with Italian seasonings or hot links.
green bean casserole
Well... I'm a Texas gal, and this is a family favorite...
(*I'm* Diabetic now, so I can't do this anymore...)
Choose a high grade of ground meat - the less fat the better.
If you want to go healthier - chose ground Turkey.
';Corn'; Casserole
2 pounds lean ground beef - browned and drained
1 heaping teaspoon Knorr Powdered Beef bullion
(in the ground meat while browning.)
1 can corn - drained
1 can Campbell's Cream of Mushroom
1 can Campbell's Cream of Chicken
2 Cups (when dry) macaroni - then cooked and drained
1/4 Cups chopped onion or bell pepper - if you like
3 pieces white bread - cubed
2-3 tablespoons melted butter or margarine.
(Boil the macaroni until al dente with a little bullion in the water for better flavor.)
Spray a large Casserole Dish with Pam Spray.
Mix together the canned soups, corn, drained macaroni and ground beef. Quickly toss the bread cubes in the melted margarine, then top the casserole with the bread cubes.
Put in a 350*F to 400*F oven (depending on your elevation) and bake until bubbly... usually 30 minutes.
You can make this with mixed vegetables... or just one... You can use spaghetti broken very short - to make it like a Tetrazinni... you can top it with shreaded cheddar cheese - instead of bread... You can even use cubed Chicken instead of ground meat.
For the healthiest slant - you can lessen the soup, increase the veggies, and make the bread and pasta whole wheat!
